RECIPE | LYCHEE AND GINGER ICED TEA

Like I said in my last recipe post I love drinking cold and refreshing drinks during the summer. So believe it or not, here I am, with another recipe post. In this post I am going to be showing you this homemade lychee and ginger iced tea. This recipe will make about 1,5 liters of iced tea.

Ingredients:
- 4 tea bags of jasmine tea
- 1250 ml boiled water
- 1 can of lychees in syrup
- At least 100 grams of ginger
- 3 limes



The Recipe
Boil 1250 ml of water an put it in a pot or a big measuring cup. Then add your 4 tea bags of jasmine and let it steep for about five minutes. 

While your tea is steeping, you can start on the lychee juice. It's essential that your lychees are juiced, so you can use a slow juicer for this. I decided to juice the lychees with the syrup so there's lots of juice. Apparently you can also use just the syrup of the lychees if you're feeling lazy or If you don't have a juicer. 

Once you've finished juicing your lychees, your tea should be good to go. All you have to do is just remove the tea bags and let the tea cool down. If you find that the cooling process is taking too long you can put the put/measuring cup in cool water so it will cool down faster. After about 10 minutes you can add the lychee juice. While your tea is cooling down, cut two limes and add the juice of the limes into your tea.

Now that all the ingredients for the tea have been added, you can focus on the ginger. I like ginger a lot, so I added quite a lot. I used about 200 grams of ginger for this recipe. But if you don't really like ginger I would say that 100 grams is about enough. Peel off the skin of the ginger, I like using a spoon and the first method of this video method I found on Jamie Oliver's YouTube channel. 

When you're done peeling your ginger, you can start chopping it into fairly rough chunks. Slice the last lime you've got and put the ginger and lime into the tea. The tea should be cold by now. If not you can let the tea cool a little longer, or add lots of ice cubes already. 

Add quite a lot of ice cubes and a red paper straw into  a mason jar if you want to be all pinterest-y and then add the iced tea. Et voila. There's your really refreshing iced tea! I discovered this ice tea at a Vietnamese restaurant in town and tried to recreate it.

This drink is perfect for a hot summer day. It's refreshing and the ginger makes it extra yummy. I have made it two times now and both of the times my family and I devoured the ice tea. If you ever decide to make this recipe please send me a pic on Twitter or mention/tag me on Instagram.

  1. This looks lovely! Is the ginger really strong though? I love Lychee but can sometimes find ginger a little too much.. would you recommend a little less ginger? xx

    1. You can put as much ginger in as you'd like, but I wouldn't recommend cutting it out, as it might be a really sweet with just the lychee juice. You can use less ginger, an amount you're comfortable with, while trying it the first time and if you think it would need more ginger, you can always add it into the lemonade later! :) x

  3. I can imagine this tastes amazing! I love ginger too so I'd add plenty.. Can you blend the lychees if you don't have a juicer, or would it be best to buy some lychee juice? x

    1. I just saw your comment lovely, I am so sorry for my late response! You could use lychee juice, but I couldn't find any in my Asian supermarket. You could buy a can of lychees in syrup and use just the syrup if you can't find lychee juice! xx
