RECIPE | OAT PANCAKES

In today's post I am sharing another recipe post with you. I absolutely love cooking breakfasts during the weekend when I have had a lazy morning. Late breakfast always has been a thing in my family. We love getting together and eating together, so we always try to sit down together at least once in the weekend. Last week it was my turn to think of something to eat during the weekend, and I decided that I wanted to cook something semi-healthy, but still really delicious.


I wanted to cook pancakes, but we did not have banana's, so I could not make my usual favourite, banana pancakes (see my recipe post here), so I started looking for alternatives in the cupboards. That's when I stumbled upon these oat pancakes. These are really easy to make, I made them with my nutri bullet. So the mixture was done within 3 minutes and I could start cooking quite quick afterwards!

For this recipe you will need:
- 90 grams of rolled oats
-1/2 teaspoon baking powder
-1/2 teaspoon ground cinnamon
-1/2 teaspoon vanilla extract
-1/4 cup water
- 1/2 cup almond milk
- 1 egg

With this amount of ingredients I made about 5/6 pancakes. 



So the first thing I did is put all of the ingredients I mentioned above into my nutri bullet. I mixed that all up for about three minutes, until I had a smooth mixture. Then I started heating up my frying pan and put some olive oil in the pan.

Once the pan was heated up and the oil was a bit warmer, I put in the first bit of mixture. Once you have put it in the pan, it is quite simple. Bake the pancakes on each side until they are golden brown. To keep the pancakes warm, I usually put them in between two plates (like this).

Then I always garnish my pancakes with some sort of fruit. I usually only add fruit, as I think that is sweet enough, but you can always add a bit of maple syrup or some yoghurt and some honey. Or add some Nutella if you want to be a bit naughty and treat yourself just that tiny bit more.

  1. Whenever I make pancakes at home I usually just top them with fruit as well, especially if I'm working from a pretty healthy recipe to begin with. These look absolutely delicious though!
