COURGETTE FRITTERS RECIPE


I recently had some courgettes left over because I decided to switch up my dinner plans. I wanted to use them up and started looking for tasty recipes that had courgette incorporated in it. I stumbled upon courgette fritters and soon stumbled upon a really tasty recipe of ‘courgette fritters’ or courgette pancakes, as some people would like to call them. I followed a recipe but started altering it in the process of cooking. So when these courgette fritters ended up being so yummy, I decided that I wanted to share this post with you on my blog!



It definitely takes a little while to prepare this, but it’s so worth it. The courgette fritters are so tasty and easy to make.

This recipe will make 4 portions of courgette fritters. 
For this recipe you will need: 
2 Courgettes
6 – 8 tablespoons Parmesan cheese
half a red chilli
Onions (I used a pre-bought onion mix with spring onion and white onion)
2 cloves of garlic
2 eggs
150 grams of flour




Step 1: Start off by grating your courgettes. This takes the longest so definitely start with this. Once the courgettes are grated, I put the grated courgette into a colander and let that sit for a good 20 to 30 minutes to get rid of any excess water.

Step 2: Cut the chilli in little pieces and put the two gloves of garlic into a garlic press. Then put the onions into little cubes. Put them into a large bowl and add the Parmesan cheese. Add the flour and the two eggs to the bowl too and mix thoroughly before adding the grated courgettes. Wait until most of the excess water has left the colander with courgette and add the courgette to the bowl. I mixed it all together with my hands as my mixer just didn’t seem to work at all. The mixture is meant to be lumpy because of all the ingredients, so you shouldn’t be worried if you it’s not becoming smooth.

Step 3: When you have mixed the batter for the courgette fritters it’s time to get your frying pan out. Put a large frying pan on a medium heat. Add some olive oil into the pan and wait until the oil is hot. Drop one big tablespoon of the mixture into the pan. If you want to be a bit more efficient, then add a few more tablespoons of the mixture into the pan, as you can usually fit around two or three courgette fritters into one pan. Cook the fritter patties for about two minutes on each side until they are golden.

I put the fritters on a plate and kept them warm in the oven while I was making the rest of the patties in the pan. Once you’re done you can just plate them up like this. My family and I ended up eating them with a little bit of aioli on the side, which was nice, but definitely not necessary as they were already very tasty on their own!
