MANGO, AVOCADO AND SALMON BOWL RECIPE


Bowls seem to be around a lot nowadays. I personally love eating out of bowls, as it's just so easy to make! This salmon bowl is one of my favourite things to have for dinner. I first had it last year at a restaurant in Marbella. At first I found it very hard to come up with a recipe that was similar to the salmon bowl I had in Marbella last year. About a year later I feel like I finally have perfected this recipe and now feel ready to share my recipe on the blog.

This probably is one of those recipes that takes a little longer than the ones I normally put on the blog, as there’s just a few more steps incorporated into this recipe. Nevertheless I still love making this and it’s so worth it. This recipe contains multiple steps, the first step is marinating the salmon, once the salmon is marinated and in the oven, there are only a few steps left to do.




With this recipe you will make four servings of my favourite salmon bowl.

For this recipe you will need:
300 grams of quinoa
4 pieces of salmon
200 grams of soy beans
200 grams cherry tomatoes
2 mango’s
2 avocado’s

For the salmon marinade you will need:
4 tablespoons of soy sauce
Tabasco (add to taste)
1 teaspoon of honey
A pinch of pepper

For the oven-roasted tomatoes you will need:
3 tablespoons of extra-virgin olive oil
A pinch of salt




Step 1: I usually start by making the salmon marinade. First things first: mix the honey, soy sauce and Tabasco together. Taste the marinade and see if it needs any pepper. Add a little bit of pepper if you want it. Once the marinade has been mixed together, put your pieces of salmon on an oven tray and put the marinade on the pieces of salmon. Let the salmon marinade in the fridge for about half an hour.

Step 2: Next up are the cherry tomatoes. Cut your cherry tomatoes in half and put them in an oven tray. Toss the tomatoes lightly with olive oil and spread them out in the oven tray. Sprinkle with salt and pepper. Once half an hour has passed, put your salmon in the oven for about 10 to 15 minutes on the grill mode. Add the cherry tomatoes to the oven after 5 minutes, so the cherry tomatoes are in the oven for at least 10 minutes.

Step 3: Once the salmon and the tomatoes are in the oven, it’s time to prepare your quinoa. Cook your quinoa like it says on the packaging. If your quinoa is cooking, then start slicing up the mango and avocado.

Step 4: When the quinoa has finished cooking then let that cool down for a bit. Sometimes I like to add a little marinade to the quinoa too. So what I like to do, is make another serving of the salmon marinade. So I put soy sauce, honey and Tabasco into a separate bowl, mix it together and bits of it to taste to the quinoa. Get your salmon and tomatoes out of the oven and set aside.

Step 5: The final step is to plate the bowl up. Start by adding the quinoa to a bowl. Then add a few tomatoes, the mango and the avocado. Don’t forget to add your soy beans to the bowl too. Finally put the salmon on top of the quinoa bowl and your salmon bowl is ready to be served.
