Happy Sunday! Sunday mornings are my favourite days of the week, as I usually get time to have a lie in and make some very yummy breakfast. A chilled, late breakfast has to be one of my favourite things in life. I love waking up late, to a sunny spring day and being able to cook someone else and/or myself a delicious looking and tasting breakfast. So when I woke up late a few Sundays ago, I decided to make banana pancakes for my friend and I. In this post I'll share my banana pancake recipe with you.
Making banana pancakes has to be one of my favourite type of breakfasts I make, as it's so easy and there are only a few ingredients.
For about 6-7 banana pancakes you'll need:
- Two mashed bananas
- Two eggs
- Fruit or any other toppings that you might enjoy with your pancakes.
The first thing I do when I start making banana pancakes is get my eggs out of the fridge. I somehow learned this from my parents, but whenever I use eggs, I get them out of the fridge so they're at room temperature.
Next I grab two bananas and a cutting board to mash the bananas. I usually mash bananas with a fork, as this is the quickest and easiest way to do it. Mash the bananas until they have a consistency like the mashy bananas have in the picture above.
Once I've finished mashing up the bananas, I usually put the bananas and the eggs in a measuring cup. I use the same fork that I used for the bananas to mix it together until it is properly mixed together.
So then I put some olive oil in a pan, let the pan heat up and start on the first pancake. If you want small pancakes like I made, it's best to use a smaller pan to put the pancakes in. I find that works easier than having a big pan on the stove. I usually cook them until they're golden/brown. Sometimes my pan gets a bit too hot and then I get those darker sides, but those could be cut off.
I usually decorate the pancakes with a lot of fruit. Because of the banana, these pancakes are already sweet. So I don't feel like I need to put any maple syrup on there. This time I decorated the pancakes with blueberries and strawberries, but I have decorated it with pomegranate seeds in the past, which you can see on this instagram photo. That's my pancake recipe. Super quick and easy!
Also, if you're into waking up with some relaxed music on a day like this, I'd recommend listening to a bit of Jack Johnson while eating these pancakes. It's because of his 'Banana Pancakes' song that I actually decided to make these banana pancakes for the first time over a year ago.
